Cow&#38;amp;Co is a concept introduced by a group of cows that want to start their own business. The cows transform themselves into self-sufficient machines for milk production. Methane gas collected from their rumen is used as a fuel to power a milking robot. The animals move independently in green spaces of a city and use an online service in order to connect to their customers. The service allows people to easily locate a cow of their choice and collect fresh milk from them. The cows are equipped with a welfare sensor that allows them to rate their customers, but also use the data for technical, veterinary and nutritious maintenance.
The idyllic image of a cow in the fields on the milk packaging seldom corresponds with reality. Bust most likely it is the only image of a cow that we as city dwellers can relate to. The real cow and other farm animals with their issues remain invisible. Over the last decades, we as consumers are slowly losing the connection to the food production – it happens out of our sight. Like this, it is more convenient for us and more efficient for the food industry. It is especially advantageous for the meat and dairy industry, as the less aware we are of what happens on industrial farms, the more likely we are to consume the products without feeling responsible for their processes.The Cow&#38;amp;Co project addresses the production-consumption relationship when it comes to our food and especially milk production and looks for future alternatives that will bring the producer of the milk directly into the city.Cow&#38;amp;Co is a critical project that aims at redefining the farm animal in the society by bringing not only the cows but also the dairy production processes back into the city. Cow&#38;amp;Co reconnects the consumer with the food production network, confronting him with issues like animal welfare and ethics of our food production, speaking metaphorically about the exploitation of farm animals.At the same time, the project proposes a transformative business model that enables decentralised fabrication, fusing agricultural innovations such as robotic milking, making use of the animal as a power source, and combining the physical and virtual world.

	Beestenbuurt
Project by Anastasia Eggers and Ottonie von RoederBeestenbuurt is a city where animals and humans cohabit unitedly. Animals, liberated from the farm, are roaming freely in the city. They propose transformative business models that enable decentralised fabrication, fusing agricultural innovations, and using their own bodies as a power source. They are not only seen as providers but as equal business partners. The city is transformed into a supermarket where the consumer is reconnected to the producer, confronting them with issues like animal welfare and ethics of animal production. In Beestenbuurt, the sheep are able to knit scarfs using wool from their own bodies and support of a robotic knitting machinery. The goats use their body movement to power a cheese manufactory using the milk of the mother and the rennet coming from the kid’s stomach. The insects of Beestenbuurt choose their place of death according to their customers‘ needs while the fish get a massage in order to harvest and sell their caviar in the neighborhood. Beestenbuurt is a critical project that reflects on the current state of the processes and conditions of industries involving animals and the relationship between humans and farm animals.

	Egg To Go

Egg to Go is an egg take-away that is run by chicken, an insight into a fictional city, where animals and humans cohabit unitedly. Chicken, liberated from the farm, are roaming in the city space, taking over the space they need. They are now at eye-level with humans as they are able to produce food for them independently, using smart technologies and their own bodies and natural resources as an energy source. The chickens power their vending machine with natural resources and their own manure that is digested into biogas.Every morning during Vienna Design Week 2019 the chicken invited the urbanites to the breakfast egg-take away where they were able to pick-up a fresh boiled breakfast egg. For the further development of their business the chickens plan to offer different kind of breakfast egg dishes, like scrambled eggs and fried eggs, and seasonal and local specials, such as colored easter eggs and Kaiserschmarrn.The speculative design project explores ways of reestablishing the connection between humans and farm animals in the city scape while critically interrogating the current state of the animal product industries and their effect on the environment.

	KitchenbathWellness treatments performed with by-products of dairy making: a homage to Cleopatra’s milk bath integrated with kitchen processes in a domestic environment.
Anti-covid measures cultivated new behaviours and new routines when it comes to food, but it could also cultivate new relationships – not only with our co-humans, but with other species and organisms who we cohabit with.During the global pandemic everything is a perceived danger to us (when leaving our apartment). Physical barriers, shields and screens, masks, latex gloves, plastic sheets hanging down from the ceiling, indications of distance – our untrustworthi- ness towards the presumed intangible virus makes us protect and isolate ourselves by all available means. We do not only isolate ourselves socially, we also isolate ourselves from bacteria as much as we can, eliminating the interspecies communi- cation. The fear of the virus comes along with fear of everything intangible.Kitchenbath is a space in which the kitchen and the bathroom fuse in one shared environment that allows for cohabitation with good bacteria. It creates a connection between hygiene practices connected both to our bodies and to the traditional food production practices.There are several touchpoints with bacteria within our household – the kitchen where dairy is produced and the bathroom are both seen as spaces aimed at eliminating bacteria. In a time when the relationship with the bacterial environments is endangered, we want to promote spaces shared with bacteria both in food and in body culture that have always been present in traditional practices. Stainless steel and ceramic surfaces and tools that are meant to be chemically cleaned to remain intact need to be replaced with environments that allow good bacteria to thrive.The project metaphorically speaks about the constantly evolving hygiene regula- tions in food production that result in loss of traditional crafts connected to it. The cooper’s craft is dependent on traditional practices connected to both personal hygiene and food preservation – due to new hygiene regulations that prohibit use of such tools in industrial food production and the changing attitude towards the body culture, the craft does not any longer have a recipient. The project creates a new space for the crafts such as coppery or cheesemaking to develop to be in- tegrated in a personal household. Kitchenbath is focusing on cheesemaking, as whey as well as the presence of lactic acid bacteria that are very healthy for our bodies and lactic acid bacteria the most well known and associated species related to food safety.

Cheese is a medium that connects the land, animal and human and represents the relationships and interdependencies between them. Cheese that is made under traditional circumstances embodies the near-by terroir and manifests the collaboration between land, animal and human through its smell and taste. As terroir is specified by the geographical characteristics of a place but also the local cultural aspects, cheese can be seen as a product that talks about the identity of a place. Traditional cheese production is often linked to a specific location: belonging to a place adds value to a product.Smell and taste do not take their origin primarily from microbes – their source is rather a complex interplay of organic matter. When it comes to milk, the initial product in the cheese production, each instance in the chain of its formation is a coincidental assembly of bacteria that is fused together in a product. When cheese is made, microbes feed and digest the organic material we expose to them intentionally. They are responsible for flavours and smells within fermented food products, unique to that specific geographical spot – under the premise that we as humans allow them to take influence. Although techniques and skills to maintain healthy environments often originate within the need to conserve foods over long periods of time, their flavour enhancing properties were secondary (as well as the urge to express local identity), they became an essential component of many local cuisines and contributed to the tradition that it is impossible to not think of them as manifestation of locality.Hygiene is one of the most important criteria in this process that has an impact on the flavour profile: by choosing a hygiene culture we define a flavour profile, a language that later on allows the product to express the authenticity of its origin. The industrial character of producing cheese does not allow much scope for bacterial interference. According to European regulations, only stainless steel and plastic are supposed to interact with milk, which forces the cheesemakers to use synthetic cleaning agents in order to avoid the expansion of harmful bacteria. The production methods that derive from the restrictions are not only taking away the local and individual character from the cheese but are also destroying the symbiotic relationship with microbes and our environments. Traditional techniques, on the contrary, profit from the collaboration with bacteria: some cheese artisans still make use of the symbiosis between wood and wey. It enables them to use wood as a medium that transports good bacteria and use byproducts from cheese production as a cleaning agent. Traditional food craftsmanship is recognised as something that needs bacteria even by the European Guide for Good Hygiene Practices: there are few restrictions on materiality of tools that do not apply to the products produced in the traditional way. This way of producing does not only need bacteria to exist, but is also dependant on an interconnected network of craftsmanship that feed each other with knowledge – something that tends to be slowly disappearing as traditional production still exists, but is rather an exception than a rule.‘Cosmopolitan Cheese’ looks at how the local identity of the cheese is constructed through the interaction with bacteria. The installation is an assembly of tools and materials that are seen as touchpoints between cheese and bacteria. In every location the travelling exhibition goes to, a cheese is created by local craftsmen and then placed in the speculative cheese cellar for ripening. The cheeses and the whey are applied on the walls of the mobile cellar contribute to the bacterial culture each time the cellar is moved. Like that, a truly cosmopolitan conditions develop – and influence the cheese ripening process.

Taking Russia’s food embargo as a starting point, this project explores the inherent contradictions in today’s local-vs-global rhetoric by creating a fictional narrative that exaggerates the consequences of the political interference in food production and consumption. This narrative highlights the potential tensions that emerge within a context of growing food nativism.The project uses food and food production as a medium to investigate our state of mind in this contradictory situation: how we see value in detaching our culinary cultures from our local identities, whether we can see the absurdity of this situation, and how we look at the phenomenon of globalisation: as a matter of unification, or as a facilitator of exchange between cultures that have their distinctive identities.Through re-thinking the way we understand culinary identity and the tradition around it, this critical work highlights cultural tensions and frictions of globalisation in the age of increasing nativism.

	Gouda Embargo
In a world where borders are closed, but the desire for globalised products still exists, Sonya, a fictional character from the year 2032, a product of globalisation, is seeking for ways of dealing with this contradiction.By following Sonya on her journey through a series of confrontations with different aspects of cheese making, we discover the possibilities of reproducing exact copies of these aspects, but also see the complexity and ridiculousness of doing so. We will discover a new notion of cheese, one which breaks away from concepts like Protected Designation of Origin (DOP) because even in the era of isolation, we will want to be able to recreate parameters of any location anywhere else in the world.This thesis scrutinises the absurdity of a top-down imposed resistance to gastronomic cultures of other countries that is supported by the slowly growing phenomenon of food nativism – a nation taking pride in its tradition without questioning how those traditions were constructed.

	Migrating seasonsThe farmer’s almanac is a traditional calendar documenting the rhythm of the agricultural year including knowledge on sowing dates, tide tables, and weather forecasting. However, due to global trade and the modernization of agricultural technology, the knowledge of this almanac became obsolete or at least out-of-tune, as well as the traditional harvest celebrations and rituals.Migrating Seasons is an attempt to redraw the farmers’ almanac according to the contemporary post-seasonal world, where the growing, harvesting, and consuming of food is no longer dependent on natural factors. The project looks at agricultural practices and their interdependence with phenomena such as the trans-European movement of workers and goods, international politics, labour rights, and energy supply. Several events representing crucial aspects of modern agriculture are highlighted on the timeline of the year. Can they become the subject of new celebrations and rituals that introduce the invisible realities behind our food system?The project is part of my work within Seasonal Neighbours, a loose-fixed collective, focusing on different forms of seasonality and forms of cohabitation in Europe’s countryside.Supported by Stimuleringsfonds Creatieve Industrie

Every year during week 44 the "olympic fire" of the aubergine season is passed on from Westland (Netherlands) to Almería (Spain) to mark the switch of the seasons between Europe’s two biggest exporters of aubergines. 	Brexit HerringThe waters that separate the United Kingdom from the Continent have always offered a natural barrier between nations as well as possibilities for connection and interrelationship. Brexit Herring traces shifting dynamics in herring fishing following the UK’s departure from the EU. It focuses on the changes within a fishing community on the east coast of England, who, along with many others, were promised a “sea of opportunity” by the Fishing for Leave campaign, replete with hundreds of thousands of tons of fish. Instead, with access to only a fraction of those stocks and few future prospects, they have been left alone to navigate this new sea of opportunity.
“They're now British fish and they're better and happier fish for it,” said British MP Jacob Rees-Mogg, envisioning a border to which wild fish in the North Sea would abide. By tracking herring, whose migration routes remain free of any notion of national frontiers or allegiances, Anastasia Eggers troubles the concept of borders in an intersecting, speculative dialogue between fishermen and fish. Through studies on collaboration in herring schools—their behavioral patterns in conditions of scarcity and abundance and their unionizing responses to predators—Brexit Herring questions the political and economic infrastructures and dynamics between the EU and the UK in relation to fisheries management in the North Sea as well as the potential for humans to exist collectively as herrings do.
